It’s still September but temperatures are dipping into the fifties in the mornings as we head into fall and what better time than now to cook up some creamy pumpkin soup! I did just that on the set of Eye Opener this morning with Molly Malloy’s from The Reading Terminal Market.
They decorated our cooking set with the phenomenal display of fresh gourds, pumpkins, apples and spices. And, right in the center of it all–a fresh pot of steamy homemade pumpkin soup. We added a little bit of cooked pumpkin, butter, onion, carrots and nutmeg. The soup has a chicken base and can be topped with fresh croutons or their homemade pumpkin brittle. A salad from the restaurant was also a perfect side dish. Theirs had kale, cranberries, pumpkin seeds and toasted Parmesan squares.
