A New Spin on Cupcakes

Cucumbers, zucchinis and hummus aren’t your typical toppings for a cupcake, but hey moms, fresh vegetables and fruits can actually make some amazing cupcakes and these are great snacks to pack in your child’s lunchbox.  Mona Wilson the owner and founder of It’s A Cupcake joined us live on Eye Opener with her amazing one of a kind cupcakes.  She uses everything from eggplant to hummus to make healthy and delicious treats.

Banana Apple Cupcakes

Ingredients

1 cups granulated sugar

2 large eggs

1 stick unsalted butter

2 teaspoons pure vanilla extract

2 cups all-purpose flour

2 teaspoons ground cinnamon

1 teaspoon baking soda

1 teaspoon baking powder

1/2 teaspoon salt

3/4 cup milk

3 apples

1 banana (large)

For the apples

3 apples (peeled, cored, and diced into little pieces)

1 large banana (diced)

1 teaspoon cinnamon

1/4 teaspoon nutmeg

1/2 tablespoon flour

2 tablespoons brown sugar

1 tablespoon canola oil or pat of butter

Toss your apples in the spices and flour. Heat over medium high heat the brown
sugar and oil/butter until slightly bubbling. Add in your apples and cook until
caramelized, and apples are soft (about 10 minutes) add bananas at the end stir to
coat.  Remove from heat and let cool

Directions

Preheat the oven to 350 degrees F. Line 2 regular size cupcake pans with cupcake
liners.

In a large bowl using an electric mixer on low speed, combine the sugar and
butter beat until fluffy, add eggs one at a time, and vanilla extract until blended. In
a separate large bowl, combine the flour, cinnamon, baking soda, baking powder, and salt.

Add the flour mixture and milk alternating to the butter mixture, mixing
on low until blended. Fold in the apples and bananas.

Fill the cupcake liners three-quarters full with batter and bake until the cupcakes
spring back when touched with your finger, 15 to 20 minutes. Let cool in the pans
for a few minutes, and then remove to a wire rack to cool completely.

Toppings: peanut butter, cream cheese, glaze or your favorite buttercream
